Hunka Hunka Burning Love…..Cookie

How many of you remember that song Hunka Hunka Burning Love, written by Dennis Linde and made famous by Elvis. I do, and I remember seeing him in two concerts.

Back when I was just around 10 (in the 50’s) or so my twin sister went to Memphis with our grandparents to see Elvis’ home at Graceland and we went to one of his concerts.  He was so young and good looking then and not into his capes and glitzy clothes. We went crazy just like all the other teenagers at the concert. It almost seems surreal now thinking about it. That was our first concert ever and a few years before we were crazy over the Beatles and “I want to hold your hand”.  Boy, those were the simpler times.

Anyway, I have had this recipe for Hunka Hunka Love Cookies for years and this morning when I saw the recipe, Elvis was the first thing that came to mind.

Start with the best chocolate you can find. The original recipe called for all semi-sweet, but I decided to add half extra dark chocolate and half semi-sweet. Melt the chocolate and the butter together in the microwave or use double boiler.

Doesn’t that chocolate look good enough you want to stick your finger in for a lick. I’m not a taster, so I just kept chugging away. Fold in the chunky chopped walnuts and you are ready to start scooping up the hunka hunka love cookies.

 Fold in the nuts and you are ready to bake.

Hunka Hunka Love Cookies

1-12 oz. bag Nestle’s semisweet chocolate chips
1-12 oz. bag extra dark Guittard chocolate chips
4 sq. unsweetened chocolate
1/4 c. butter
1/2 c. flour
1/2 tsp. baking powder
1/4 tsp. salt
4 eggs
1 1/3 c.  sugar
2 tsp. vanilla
2 c. walnuts, coarsely chopped
1 c. white chocolate, melted, for drizzling
1 c.  semisweet chocolate chips, melted for drizzling

In a heavy saucepan, over medium heat, melt 1 pkg. (12 oz.) chocolate chips, unsweetened chocolate and butter, stirring constantly. Pour into large mixing bowl to cool slightly. Sift together dry ingrediets; set aside. Add eggs, sugar and vanilla to chocolate mixture. Beat until well mixed. Add flour, and beat on low speed until well mixed. Stir in remaining chocolate chips and nuts. Drop dough, 1/4 cup at a time, 3″ apart on lightly greased cookie sheet. Flatten slightly. Bake at 350° 12-15 minutes, or until edges are firm and surface is dull and cracked. Let stand 2 minutes, remove and cool on wire racks. Drizzle with melted white chocolate and semisweet chocolate in patterns.  Makes 2 dozen

Try not to eat these all in one sitting. These were soooo good right out of the oven. I couldn’t resist having one with a glass of milk. I never said I didn’t taste things after they were done. I’ve just never eaten cookie dough. Would much rather wait for a hot cookie right from the oven.
